Ross il-Forn, is also known as baked rice. This is a dish my mother used to prepare often. It is a common dish to find in the Gozitan household. Also, every family has its own particular “best” way to make it, so you will find different variations of this recipe. 

You can try local baked rice from some of the local bakeries. Small portions will be available, and it is a filling dish. Rice, usually parboiled is mixed with a red sauce with minced meat and baked in the oven. As I said, different variations exist. Some add vegetables, other add boiled eggs. 

In recent years it become custom to add a generous amount of cheese on top of the dish. This would give it a nice reddish look and add a cheesy flavor to the sauce.
