The Prinjolata is one of the traditional sweets dating back to the Knights of Saint John. Although small amendments have took place along the many years, it is still as delicious as it was in the beginning. 

This sweet is custom during the Carnival celebrations. This is a yearly tradition on the island of Gozo. Prinjolata is very easy to make as it is a no bake sweet. Shaping the sweet is even simpler, as per tradition it has to be in a shape of a dome. 

Preparation is easy. All you need is fine crushed biscuits, a variety of nuts, and butter cream. Mix well together and let it sit. Some people also mix cake, but it’s not the best quality result. The sweet is pretty heavy both in weight and in sweetness. Cover it with meringue and little molten chocolate. Enjoy!!
