Minestra

Minestra is a traditional plate which was very common in the past. Also known as vegetable soup, nowadays it is cooked less often especially during the summer months. 

In the distant past where most people were farmers, Minestra was almost a daily meal. Meat was scarce but vegetables were abundant. Every family used to make the Minstra with the vegetables they would grow from their own land. Hence, there might be some differences between each family’s recipe. 

When I was a child I remember helping my grandmother preparing a large pot full of veggies to make the Minestra. The soup is best slow cooked for several hours to get the best taste.
