Imqarrun

mqarrun maltese baked pasta

Imqarrun, also known as Ghagin il-Forn is the Maltese version of Baked Pasta. It is another dish which is a local custom and still very alive today.

Similar to the “Ross il-Forn” dish, the Imqarrun needs a thick red sauce with minced meat. This time instead of rice we will use pasta. For best result, the pasta need to be cylindrical with a big circumference. This is so the sauce will slide on the inside of the pasta as well. First boil the pasta then mix it with the sauce. Finally bake in oven and garnish with cheese to taste.

You can try this dish from the local bakeries. I remember my mother preparing this recipe in the early morning. I admit, I never ate baked pasta as a child. I did not like the hard crunchy crust. However, it is a good local dish to try.
