Aljotta

Aljotta is the Maltese term for fish soup. As Gozo is an island, there are several points from where fishermen can access the water with their boats. You can say that in the past there were fishermen in every village.

The local fish soup is preferably made with small fish. For the best result fish from the sea bed is used. This gives a much stronger taste. Nowadays, fish heads are also used.

Preparation for the soup is simple and it does not take a long time to cook. It is common to be served alongside a portion of boiled white rice.
