Gozo Fried Rabbit

Rabbit is a traditional dish that is quite popular on Gozo. Still a very common plate, rabbit can be fried and braised or enjoyed as a stew. 

The traditional way to cook rabbit is to fry it in oil and braise in white wine. I admit that this will result in a tasty dish that I love. Do keep in mind that for rabbit meat to get tender, it has to be cooked for at least 2 hours. However, you will not be disappointed by the result. 

Once ready, enjoy with French fried fries. If you want a more local experience, try it with jacket or mashed potatoes and obviously a piece of local bread, “hobza“.
