Timpana

Timpana is a local dish very similar to the Imqarrun, which is the Maltese version of Baked Pasta. Personally, I always loved Timpana much more as it keeps the pasta moist and soft. 

The Baked Pasta dish is served as a hard crunchy lunch. To make the Timpana, the mix of pasta and sauce is placed inside a pastry as if you are making a pie. Once everything is in place inside an oven dish, place a piece of pastry on top so as to fully cover the pasta. 

The result is very good. Apart from the delicious crispy top pastry, the pasta on the inside will remain moist. The rich meat sauce gives it extra flavor. You may find different versions of this recipe which include peas and boiled eggs.
